Vineyard

On the hillsides of Gascony (South-West), our vines benefit from a privileged terroir made of sandy-silty and clay-limestone soils, water and sun.
Before harvesting, the grapes are checked and tasted. This check ensures the quality of the berries and determines the optimal time for harvesting based on their aromatic maturity. The grapes are then harvested at night, during the coolest hours, in order to preserve their quality.
UBY has selected the best plots of Ugni-Blanc and Baco in tawny sand soils to give its eaux-de-vie their suppleness and aromas.

Winemaking

The vinification method is the same as for wines. The wine is obtained by gentle pressing, low-temperature fermentation and aging on fine lees.
Distillation takes place in winter, in the house's traditional copper still. The wine is brought up to temperature by continuous heating and then the alcohol is placed in barrels.
It is during aging in French oak barrels that the miraculous alchemy between alcohol and wood occurs. After a slow evolution, a few months, a few years... the eau-de-vie develops its aromas and takes on its characteristic amber highlights.

UBY Armagnac Trilogie 6 years old is an exceptional Armagnac.
Supple and round, it can be enjoyed on a sweet note, a black coffee or with a cigar.
